It's been one of our passions for a long time and we're really happy to bring our range of pâtés to a wider audience. Head Cheese uses one of the most overlooked parts of the pig, the head. It's brined, boiled, shredded and set in a terrine seasoned with green herbs, vinegar and lots of salt and pepper. Best enjoyed with some crunchy bread and pickles.
